This enormous early 20th-century confit pot from southwestern France features a charming apricot blush glaze, and is a prime example of traditional French culinary stoneware.

Confit pots were originally used to preserve meats, particularly duck and goose, utilizing the confit method where the meat is slowly cooked and stored under its own fat. This process not only enhanced flavor but also ensured long-term preservation before refrigeration was common. French confit pots, distinctive with their half-glazed surfaces—glazed on the interior and top portion to aid in cleaning and storage—were traditionally buried in cool cellars. The earthenware composition and the naturally insulating properties of the terracotta helped maintain a constant cool temperature, ideal for preserving the contents. Today, these pots are cherished as both functional kitchenware and decorative pieces, embodying rustic French culinary heritage.
