Originally used for cooking, this beautiful and weighty nineteenth-century copper braising pan, or daubière hails from the end of the nineteenth / early twentieth century. France. The daubière is the modern (that is, late nineteenth-century) version of the seventeenth-century (and earlier) braisière, a lidded pan used for cooking stews or braising meats in a fireplace in a manner that mimics cooking of an oven. 

The braisière would be nested into the fire embers, and hot coals would be added atop the tightly fitted lid to create an equal distribution of heat from the top and bottom of the pan, much like an oven. This technique allowed for the contents to braise over the course of hours, softening the meat and melding the flavors. The copper handles on the side allow for easy transport. Today, this would be the perfect piece to add to a collection of kitchen copper. Stamped with a "W" monogram, this would also make a special gift for a copper or French antiques-loving individual whose name includes a "W".
